In the stone buit cellar of Down Village, when the season is right, there are exceptional varieties of mushrooms. Shiitake, Nameko and pleurotus are the main varieties that we grow and we constantly conduct experiments in order to acuire more mycellium varieties in order to establish an autonomus facility to provide mushroom substrate.
